This is by far one of my favorite recipes, especially this time of year. I was so excited a couple of years to put my asparagus bed in and finally this year we had a great harvest of asparagus. It takes 3 years for asparagus to get established and this year was year 3! If only they could grow all summer. Not only is this recipe a fam favorite it is quick and SIMPLE.
Servings: 4 Prep Time: 5 minutes Cook Time: 8-10 minutes
INGREDIENTS:
2 pounds of this asparagus trimmed
Course sea salt
Freshly ground black pepper
1/2 cup olive oil
8 cloves fresh garlic minced
1 teaspoon onion powder
DIRECTIONS:
- Preheat oven to 400 degrees
- Line a large sheet pan with parchment paper. Set aside
- In a small pan, heat oil, garlic, and onion powder on medium-low heat
- Cook for 3 minutes, until mixture is fragrant but not browned
- Spread asparagus in a single layer on the prepared pan
- Lightly sprinkle with course sea salt and freshly ground pepper
- Drizzle garlic-oil mixture on asparagus
- Roast 8 to 10 minutes until asparagus are bright green. I like mine a little crispy
- Serve hot
